Vineyard Notes
The 2023 Grape harvest in Sonoma County was characterized by cooler temperatures, abundant rainfall and delayed start. The combination of excessive rains over the winter months, late budbreak and slow ripening outlined white varietals high in acid and flavors reflecting perfect maturity flavor complexity at picking.
Production Notes
Each varietal was processed individually to express the true essence and purity that represents the Terroir. The wine was aged almost equally in a combination of neutral French oak with stainless steel and concrete tanks.
Food Pairing Notes
Try Unico Vino Blanco with Oyster Rockefeller, assorted sashimi platter or Peach burrata and arugula salad.
