Vineyard Notes
The 2021 growing season started with very little rain, leading to the second year of drought conditions in Napa Valley. The long, warm summer saw few extreme heat waves, and the foggy mornings set the stage for vibrant and expressive wines. Thanks to the location of Coombsville, we saw beautiful fruit development throughout hot days and even cooler nights. Add all that with this year’s berry size, and you get another amazing vintage from Coombsville.
Production Notes
This 100% Cabernet Sauvignon spent 5 to 7 days in a cold soak to intensify the mountain fruit characteristics and then was fermented for 10 days in stainless steel tanks. Aged in 70% new French oak for 22 months, then moved back into the cellar for bottling. This extremely age-worthy “Mama Ester” will only get better within your cellar for 20+ years.
Tasting Notes
This garnet, dark ruby wine has the iconic Mi Sueno red color that our wines are known for. The aroma is filled with red currant, black cherry, fig, toasted French oak, dried pine, vanilla, cedar, and leather. This lush full-bodied wine is complex and bursting with spicy flavor. It is a gentle giant with polished, ripe, chewy, silky tannins and a resilient finish.
Food Pairing Notes
A wonderful pairing that would not let you down would be a homemade mushroom Risotto.
