Vineyard Notes
The 2020 growing season started out with delayed rainfall at the end of March. Our vineyard oversees rustic beauty and diverse microclimates atop the famous Mount Veeder AVA, this hillside vineyard sits at 900 to 1200 feet depending on where you are. Blocks 1 and 2 surround themselves with gravel, clay, rocky soils and great sun exposure, resulting in a unique and complex wine.
Production Notes
This 100% hillside Cabernet Sauvignon was grown at the steepest
elevation of our Mount Veeder vineyard. It is a 100% C clone, which is known to be the stingiest clone for Cabernet. While it yields very little, the small amounts it does produce, makes for intense and concentrated Cabernet Sauvignon. It was aged for an incredible 28 months in 3-year air-dried new French oak.
Tasting Notes
The almost black vibrant color turns into a gentle wave, leaping out of your glass once again leading to a “Wow factor” with cocoa dust, sandalwood, cigar box, black pepper, wet stone, plum and pinecone aromas. On the palate, enjoy a seamless harmony with great dark intense fruit concentration that explodes with cassis, vanilla, leather, rocky graphite, and big bold tannins that deserve respect. A true gift of Mother Nature explodes through the journey from start to finish!
Food Pairing Notes
Enjoy with a beef wellington with Dijon mustard, thyme and mixed mushrooms. As well as homemade beans with carne asada tacos would also be more than suffice for this beautiful 100% hillside Cabernet Sauvignon.
