Vineyard Notes
The 2019 growing season started out with copious rainfall. The long, warm summer saw few extreme heat waves, and the foggy mornings set the stage for vibrant and expressive wines. The long mild late summer helped preserve freshness and finesse in the fruit. All in all, exceptional fruit with bright acidity and ample texture created yet another amazing vintage.
Production Notes
This 100% Cabernet Sauvignon spent 5 to 7 days in a cold soak to intensify the mountain fruit characteristics then was fermented for 28 days in stainless steel tanks. Aged in 75% new French oak for 22 months, it was racked barrel-to-barrel, and bottled unfined and unfiltered. This extremely age-worthy wine will cellar for 15+ years
Tasting Notes
The patented Mi Sueño rich, inky, ruby purple color hits you first, then amazing aromas of graphite, vanilla, violets, cherry, sandalwood, leather, and molasses fill your nose. The palate screams out with cassis, framboise, blackberry, dark cherry, rich vanilla, espresso, roasted almonds, to name but a few. Big ripe, mouth-gripping, and spicy tannins lead to a long finish that makes you want more.
Food Pairing Notes
This wine screams out for Tomahawk Ribeye Steak with a Red Wine Reduction. Or try it with uniquely different way, with Dark Bittersweet Chocolate with a drop of Homemade Hot Sauce on a Cracker. Both will leave you immensely satisfied.
