Vineyard Notes
The 2016 vintage started with an unseasonably warm late winter and spring, which led to early bud break. However, in May a cold nap destroyed many of the flowers which led to shatter (uneven fruit set). Additionally, there were drought conditions and thus all of this amounted to a very early harvest of remarkably low yields but very high quality.
Production Notes
This wine is aged for 22 months in 65% new French oak then left patiently waiting in the bottle for over a year before its release which makes this wine immediately enjoyable, with the rounded tannins and rich mouthfeel that our wines have become synonymous.
Tasting Notes
This wine leads with classic aromas of rich cassis, currant, cedar, cocoa and a wisp of chocolate. Flavors are of plum, currant, brown sugar and dried figs with ripe chewy tannins and an old-world impression of graphite and minerality that lead to a long luscious finish. This beauty will unfold with years to come.
Food Pairing Notes
This cab is prime for a Mexican fiesta- throw some carne asada on the grill and accompany it with homemade tortillas and stewed beans. Of course, it would not be amiss on your table served alongside a rib-eye with roasted fingerling potatoes and a chocolate bread pudding for dessert.
