Vineyard Notes
We blend Cabernet grapes from four different vineyards, three in the Coombsville appellation, in order to achieve a perfectly balanced and structured wine. Coombsville is one of the newest, and most promising, appellations in Napa with a temperate climate which allows a longer and slower ripening. Grapes from Oak Knoll’s warmer climate add a touch of richness to the wine and contribute to the smooth and elegant texture.
Production Notes
This wine is aged for 24 months in 55% new French oak barrels and bottle-conditioned for 12 months. This extended aging allows for the tannins to soften and creates a rounded mouthfeel.
Tasting Notes
Great classic Napa Valley Cabernet Sauvignon aromas of black fruit, coffee, and chocolate lead into rich layers of ripe berries, nutmeg, black pepper, and caramel. Velvety and well balanced, with approachable tannins and beautiful oak integration, this is a wine to be enjoyed for years to come.
Food Pairing Notes
It’s Cab - where’s the beef? Besides the obvious ribeye we dream of every time we drink this wine, try braised lamb shanks with creamy mashed potatoes, eggplant Parmesan, and gingerbread for dessert.
