Vineyard Notes
			The 2021 vintage will be remembered for low yields with intensely flavored, small-sized berries and smooth and uneventful harvest. The season saw very little rain, leading to the 2nd year of drought conditions. Mother nature gave winemakers excitement as the 2021 conditions were superb—while the yields were small, but the quality has been amazing.
Two clones of Pinot were used--the Swan & Calera--is notorious for small, tight clusters, and produce very low yields. The Swan brings finesse and freshness, while the Calera brings structure and power. The combination of these two make an incredible pair.
		Production Notes
			The grapes are destemmed and fermented in chilled steel tanks to preserve the fresh fruit and rich flavors. This results in dark and intense color--not like your average Pinot Noir!
		Tasting Notes
			The rich, dark and almost cab like color immediately impresses. Aromas scream out wet stone, ripe cranberry, cherry, vanilla, clove, ripe raspberry, and strawberry jam. The palate is bombarded with ripe raspberry, cherry cola cream, vanilla, and pomegranate. The mouthwatering acidity and the supple viscosity make this a vintage to remember.
		Food Pairing Notes
			The Pinot would fare well with Salmon or Roast Turkey but try it with Grilled Pork Chops marinated in Mi Sueño Pinot Noir and Sautéed Chanterelle Mushrooms and your palate will thank you.
