Vineyard Notes
In 2019, abundant rainfall marked the begining of the growing season. The summer was long and warm, with no severe heat waves, and the morning fog contributed to producing vibrant and expressive wines. The mild late summer further contributed to preserving the fruit’s freshness and finesse. The result was an exceptional vintage with bright acidity, ample texture, and an overall amazing quality.
Production Notes
The Cabernet grapes were carefully hand-picked in late October, sorted by hand, and cold-soaked to enhance aromas and flavors. Following fermentation, the wine was gently pressed and transferred to 100% new French oak barrels. The wine aged in these barrels for 36 months, followed by an additional year of bottle aging.
Tasting Notes
The inky dark Mi Sueño Red color is stunning. This Cabernet commands respect with its potent aromatics of coffee, tobacco leaf, mocha, smoky pumpkin seeds, and plum, accompanied by subtle hints of damp earth from a spring garden. On the palate, a complex and intense flavor profile unfolds, characterized by its robust tannins and impressive structure, which reveal the beauty in its roughness. With every sip the powerful presence of dark fruit, dark chocolate, cherry, and tobacco, linger on the tongue. This is a Cabernet for the true passionate Napa Valley Cabernet lovers.
Food Pairing Notes
The ultimate pairing is a classic Tomahawk steak topped with herb butter, grilled veggies and mash potatoes. The luscious mouthfeel and the gripping and balanced tannins would cut through the fat and simply be a divine pairing.
