Vineyard Notes
2018 was hailed as a seamless season of heavenly hangtime and phenomenal phenolic development. There was abundant rains in the spring, and lots of filtered light in the early summer. Mild but warm temperatures dominated the summer and fall making way for flavor complexity. An almost perfect vintage.
Production Notes
This extremely age-worthy wine was fermented in stainless steel tanks for 27 days following 5 to 8 days of cold soak to intensify the mountain fruit characteristics. Aged in 75% new French oak for 22 months, racked barrel-to-barrel, and bottled unfiltered. Although enjoyable upon release, this wine will easily cellar 15 to 20 years.
Tasting Notes
Incredible aromas of graphite, cherry jam, molasses, plums, violets, radiate from the glass…dig deeper and minerality, violets, wet stone, and leather appear. On your palate, intense crème de cassis, ripe dark cherries, white vanilla and sweet integrated oak flavors dominate and lead to strong ripe tannins and balanced acidity.
Food Pairing Notes
Complex and balanced wine, this wine pairs well with Ribeye steaks with chimichurri or mushroom sauce. You can also have a dessert course and try cherry truffles or chocolate cake with raspberry sauce.
