Vineyard Notes
2018 was hailed as a seamless season of heavenly hangtime and phenomenal phenolic development. There was abundant rains in the spring, and lots of filtered light in the early summer. Mild but warm temperatures dominated the summer and fall making way for flavor complexity. An almost perfect vintage.
Production Notes
This 100% hillside Cabernet Sauvignon was grown at the steepest elevation of our Mt. Veeder vineyard. It is 100% C Clone and is known to be the stingiest clone for Cabernet. While it yields very little, the small amounts it does produce, make for intense and concentrated Cabernet Sauvignon. It was aged for an incredible 34 months in 3 year air-dried new French oak.
Tasting Notes
The dark purple, impressive inky, & velvet color leads to a “Wow factor” with graphite, wet clean dirt, dark cherry, ripe red raspberry, leather, cassis, vanilla, coffee, molasses, and sugarcane aromas. The palate erupts with big luscious dark cherry, toasted almonds, caramel, white chocolate, espresso, bittersweet chocolate, and so much more. The seamless mid-palate leads way to rich and big, yet fully integrated tannins, and the finish is harmonious and lasts for 25+ seconds.
Food Pairing Notes
A medium rare, Pan Seared Ribeye Steak with Creamy Mushroom Sauce and Chive-Garlic Mashed Potatoes would be divine with this 100% hillside Cabernet Sauvignon
